I have perfected my recipe and I swear it's better than Panera! Made with simple ingredients, and by far the best part: sharp cheese with tons of flavor.
One of my favorite go-to comfort foods is soup. I really, really love a good broccoli soup and I have made my own custom recipe using some of my favorite ingredients that pack a ton of flavor into every bite!
This dish can easily be made in under 30 mins. We love to pair our soup with a fresh baked loaf of sourdough bread.

You can divide the ingredients in half to make a smaller batch or double it to make it larger. I like to cook large meals and have leftovers instead of cooking every single day around our family's busy schedule!
Ingredients
4 Tbsp Butter or Bacon Grease
1/2 Onion, diced
1 Large Carrot, diced or Shredded
3 Cloves Garlic, minced
4 Tbsp AP Flour
2 Cups Chicken Broth
1 Tsp Salt
1/2 Tsp Pepper
1 Tsp Garlic Powder, optional
3 Cups Broccoli Florets, fresh or frozen
2 Cups of Milk or Cream
8oz Cheddar Cheese, shredded
3 oz Parmesan Cheese, Shredded
Directions
Melt butter in a large dutch oven or pot over medium-high heat. Add the onion and carrot and cook 3-4 minutes or until softened. Add the garlic and saute for another minute until fragrant.
Add flour and whisk for 1-2 minutes or until the flour begins to turn golden in color. Pour in the chicken stock and stir; then add broccoli florets, and seasoning. Bring to a boil then reduce heat to medium-low and simmer for 15 minutes or until the broccoli and carrots are cooked through.
Stir in milk and cheeses and simmer for another minute. Taste and adjust seasoning if needed.
Serve with toasted crusty bread or in a bread bowl if desired

Storage
Store in an airtight container in the refrigerator. Reheat on the stove top or in the microwave.
Substitutions
• I recommend the combo of sharp cheddar and parmesan cheese but you can add any cheese you would like.
• You can also adjust the amount of seasonings to your taste. I like to add ground black pepper to mine but the kids complain so I just sprinkle it on when it's on my plate.
